Pasta of your choice (we usually like angel hair but this time I used penne rigata)
Whole stick of butter, I cut it into pats to aid in quicker melting
1 C heavy whipping cream
2 cups of cooked, flaked salmon
Fresh chopped garlic
Freshly grated Parmesan (the other stuff will do in a pinch)
Salt & freshly ground pepper
'Dash' of nutmeg
Fresh, chopped parsley
I basically fried the salmon in a bit of olive oil, not much, just enough for some flavor. I added a bit of garlic powder... well, to me it was a bit, to you it might seem like more... Cook until done, remove from pan and flake with a fork. Don't clean out the pan, just cook off any moisture then add the butter and cream, reduce heat to low & cook, stirring occasionally until the butter is melted. Turn the heat up (just a bit) and add the salmon, Parmesan, salt, pepper, and nutmeg (the last three to taste, I just did about 3 or 4 shakes of the nutmeg) and simmer. Add chopped parsley. Right before serving I added a bit of lemon juice. Serve over the pasta of your choice! I added a sprinkling more of the parm to each serving as I dished it up.
I did consider adding some sort of veggie, such as sugar snap peas, but they weren't on hand and I didn't feel like hitting the store. As with all my posts feel free to experiment, just let me know what you do and how it turns out in the comments so I can try it too!
